Who doesn’t love fun food?! This foodie fake out is pretty awesome– it looks like cool savory guacamole and chips but is really sweet avocado ice cream with strawberry bits accompanied with cinnamon sugar chips!

Living in San Diego, California, we get to indulge tirelessly on avocados year round. It’s one of my most favorite foods that I love enjoying in different ways, such as this delicious ice cream! My kids not only LOVE this ice cream and chips, but the fun presentation as well. It’s definitely a family favorite!

guacamole ice cream

Guacamole Ice Cream (avocado and strawberry ice cream)

  • 3 medium ripe avocados
  • 1 ½ tablespoons fresh lemon juice
  • ¾ cup condensed milk
  • 1 ¼ cups heavy cream
  • ½ cup milk
  • ½ cup diced strawberries

 

Step 1

Lets prep our fruits.

Dice strawberries then set them aside. These will look like tomatoes in our ice cream!

Halve, seed and scoop the flesh out of each avocado.

Place avocado flesh in a food processor or blender. Add lemon juice, condensed milk, milk and heavy cream.

Step 2

Process/blend until very smooth and there are no visible chunks or lumps. If you’re using a food processor, make sure to stop and scrape the sides down a couple of times during this process.

Step 3

Pour the mixture into a large reusable container with a lid. Using a spatula, stir in the diced strawberries. Cover and place in the freezer.

Step 4

If you have an ice cream machine, after 2 hours in the freezer, place the mixture into the machine and churn until the texture is to your liking.

If you don’t have an ice cream machine, use a spatula to stir the mixture every 45 minutes; you’ll want to stir it vigorously. What we’re doing here is breaking up the crystalline structure that forms as the liquid freezes.

Serve with cinnamon sugar chips! The recipe is below. I love this ice cream and I hope you will too! If you love the look but not adventurous enough to try the avocado ice cream, substitute any green ice cream and make sure to stir in some chopped strawberries. A wonderful alternative is pistachio ice cream with chopped maraschino cherries– a combination you’d find in spumoni!

Cinnamon and Sugar Chips

  • 4-5 flour tortillas (fajita size)
  • 1 tablespoon melted butter
  • 3 tablespoons sugar
  • ½ tablespoon cinnamon

Step 1

Preheat your oven to 350 degrees. Line a baking sheet with parchment, set aside. In a small bowl, mix together cinnamon and sugar, set aside.

Step 2

Grab 4-5 flour tortillas. The fajita or taco sizes are great for this; they make perfect little triangles. Brush both sides of each tortilla with butter.

Step 3

Sprinkle both sides of each tortilla with the cinnamon sugar mixture.

Cut into sixths.

Step 4

Time to bake!

Place the pieces on the baking sheet.

Bake for 10-11 minutes. Let cool for a minute and lift and move the chips around so they don’t stick to each other.
